Soak the Beans
Rinse the red kidney beans under cold water and soak them in water for at least 8 hours or overnight. Drain and set aside.

Dice the onion, green bell pepper, and celery. Mince the garlic cloves and set aside.

Slice the Andouille sausage into 1/4-inch pieces.

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add Garlic and Sausage
Stir in the minced garlic and sliced sausage. Cook for an additional 3-4 minutes until the sausage is browned.

Add the soaked and drained beans, chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper to the pot. Bring to a boil.

Reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

While the beans are cooking, prepare the rice according to package instructions. Typically, combine 1 cup of rice with 2 cups of water, bring to a boil, and then cover and simmer for 18-20 minutes.

Once the beans are tender, remove the bay leaves and stir in fresh parsley. Serve the red beans over rice.
