    Season the Neck Bones

    In a large bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the neck bones until well coated.

    Chop the Vegetables

    Dice the onion, mince the garlic, and chop the carrots and celery into bite-sized pieces.

    Sear the Neck Bones

    In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned neck bones and sear them on all sides until browned (about 5-7 minutes).

    Once the neck bones are browned, add the chopped onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Broth and Seasonings

    Pour in the beef broth and add the bay leaves and thyme. Stir to combine, making sure to scrape up any browned bits from the bottom of the pot.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 2 to 2.5 hours, or until the neck bones are tender and the meat is easily pulled from the bone.
