Pasta

Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce Preparation

  1. 2

    Make the Cheese Sauce

In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 4 tablespoons of all-purpose flour and cook for about 1 minute until lightly golden. Gradually whisk in 2 cups of milk, stirring constantly until the mixture thickens and bubbles.

  2. 3

    Add Cheeses and Seasoning

Remove from heat and add 2 cups of shredded cheddar cheese, 4 ounces of softened cream cheese, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of black pepper. Stir until the cheese is fully melted and the sauce is smooth.

Combine and Form Wedges

  1. 4

    Combine Pasta and Cheese Sauce

In a large mixing bowl, combine the cooked macaroni and the cheese sauce. Stir until the pasta is evenly coated.

  2. 5

    Prepare for Wedges

Spread the mac and cheese mixture into a greased baking dish, pressing down to create an even layer. Refrigerate for at least 2 hours or until firm.

Coating and Frying

  1. 6

    Prepare Coating

In a shallow bowl, mix together 1 cup of breadcrumbs, 1 cup of grated parmesan cheese, and 1 teaspoon of salt. In another bowl, beat 2 large eggs.

  2. 7

    Cut and Coat Wedges

Once the mac and cheese mixture is firm, cut it into wedges. Dip each wedge into the egg mixture, then coat with the breadcrumb mixture.

  3. 8

    Fry the Wedges

In a large skillet, heat 2 cups of oil over medium heat. Fry the wedges in batches for about 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.
