    Wash and Cut the Potatoes

    Thoroughly wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes (optional), then cut them into thin strips about 1/4 inch thick to create fries.

    Soak the Potatoes

    Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature for frying.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. Ensure they are as dry as possible to prevent oil splattering.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

    While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss gently to ensure even coating.
