Potato Preparation

Method

Potato Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into curly fry shapes using a spiralizer or curly fry cutter. Soak the curly fries in cold water for at least 30 minutes to remove excess starch.

  2. 2

    Dry the Fries

After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

  3. 3

    Heat the Oil

In a large deep pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

  4. 4

    Fry the Curly Fries

Carefully add a handful of the dry curly fries to the hot oil. Fry in batches for about 4-6 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

  5. 5

    Season the Fries

While the fries are still hot, season them with salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper to taste. Toss to coat evenly.

Dipping Sauce

  1. 6

    Prepare the Dipping Sauce

In a medium bowl, combine mayonnaise, ketchup, hot sauce, lemon juice, and garlic powder. Mix well until smooth and creamy.
