Rinse the catfish fillets under cold water and pat them dry with a paper towel. Cut the fillets into strips, about 1-inch wide.

In one bowl, place the all-purpose flour. In a second bowl, combine the cornmeal, baking powder, salt, black pepper, and paprika. In a third bowl, whisk together the eggs and buttermilk until well combined.

Bread the Catfish
Dip each strip of catfish first into the flour, shaking off the excess. Then dip it into the egg and buttermilk mixture, and finally coat it in the cornmeal mixture. Ensure each strip is evenly coated.

In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
