    In a large bowl, submerge the catfish fillets in buttermilk. Let them soak in the refrigerator for at least 30 minutes.

    In a shallow dish, mix together the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper until well combined.

    In a large cast-iron skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Remove the catfish fillets from the buttermilk, allowing excess liquid to drip off. Dredge each fillet in the coating mixture, pressing firmly to adhere.
