Method

Pudding Base Preparation

  1. 1

    Combine Dry Ingredients

In a medium saucepan, combine granulated sugar, flour, and salt. Mix well.

  2. 2

    Add Milk

Gradually whisk in the milk until the mixture is smooth and free of lumps.

  3. 3

    Cook Mixture

Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.

  4. 4

    Prepare Egg Yolks

In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot pudding mixture to the yolks, whisking constantly to temper them.

  5. 5

    Combine Yolks with Pudding

Slowly whisk the tempered yolks back into the pudding mixture in the saucepan. Continue to cook for another 2 minutes, stirring constantly.

  6. 6

    Add Flavorings

Remove the saucepan from heat and stir in vanilla extract and butter until melted and well combined.

  7. 7

    Cool the Pudding

Remove from heat, let it cool slightly, then transfer to a bowl. Cover with plastic wrap directly on the surface to prevent a skin from forming. Cool to room temperature.

Assembly

  1. 8

    Layer the Ingredients

In a large serving dish or individual cups, layer vanilla wafers, banana slices, and the prepared pudding. Repeat the layers until all ingredients are used, finishing with pudding on top.

  2. 9

    Top with Whipped Cream

Spread the whipped cream evenly over the top layer of pudding, smoothing it out with a spatula.

  3. 10

    Chill Before Serving

Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the pudding to set.

  4. 11

    Garnish and Serve

Before serving, you can add additional banana slices or crushed vanilla wafers on top for garnish.
