    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Slice them thinly (about 1/8 inch thick) using a sharp knife or mandoline.

Cheese Sauce

    Make the Roux

    In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes, stirring continuously until the mixture is golden brown.

    Add Milk

    Gradually pour in the milk while whisking constantly to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

    Add Cheese and Seasoning

    Remove the saucepan from heat and stir in the shredded cheddar cheese until melted. Then add salt, black pepper, garlic powder, and onion powder. Mix until smooth.

Assembly and Baking

    Layer the Potatoes

    In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom.

    Add Cheese Sauce

    Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce.

    Prepare the Topping

    In a small bowl, mix together breadcrumbs, Parmesan cheese, and paprika. Sprinkle this mixture evenly over the top of the cheese sauce.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and bubbly.
