    Prepare the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the spaghetti.

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta and cook until it is crispy and golden, about 4-5 minutes. Remove from heat but keep the pancetta and the fat in the skillet.

    Mix Eggs and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Ingredients

    Add the hot drained spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing to combine thoroughly. If the mixture is too thick, add reserved pasta water a little at a time until you reach the desired creamy consistency.

    Season and Serve

    Taste and adjust the seasoning with salt and extra black pepper if necessary. Serve immediately, garnished with additional Parmesan cheese if desired.
