Cooking Instructions

  1. 1

    Prepare the clams

Rinse the clams under cold water to remove any sand or grit. Discard any that are open and do not close when tapped.

  2. 2

    Cook the pasta

Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

  3. 3

    Sauté garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.

  4. 4

    Add clams and wine

Add the cleaned clams to the skillet, pour in the white wine, and cover with a lid. Cook for about 5-7 minutes until the clams open up. Discard any that remain closed.

  5. 5

    Combine pasta and clams

Add the cooked orecchiette to the skillet with the clams. Toss gently, adding reserved pasta water a little at a time to help create a sauce. Season with salt and black pepper to taste.

  6. 6

    Garnish and serve

Remove from heat, sprinkle with chopped parsley, and serve immediately.
