    Prepare the Mussels

    Rinse the mussels under cold water and remove any beards. Discard any mussels that are open and do not close when tapped.

    Sauté Shallots and Garlic

    In a large pot, heat olive oil over medium heat. Add the chopped shallots and cook until softened, about 3-4 minutes. Add the shaved garlic and cook for an additional 1-2 minutes until fragrant.

    Add N'duja and Liquids

    Stir in the n'duja sausage, breaking it up with a spoon. Cook for 2-3 minutes until it starts to render its fat. Pour in the white wine and chicken broth, and bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened up. Discard any that remain closed.

    Finish the Broth

    Stir in the chopped parsley, and season with salt and black pepper to taste.

    Serve

    Serve the mussels in a bowl with the broth, accompanied by grilled bread for dipping.
