Cooking Instructions

  1. 1

    Prepare the Potatoes

Boil the fingerling potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly before slicing in half.

  2. 2

    Grill the Swordfish

Preheat the grill to medium-high heat. Brush the swordfish steaks with olive oil and season with salt and black pepper. Grill for about 4-5 minutes on each side or until cooked through and grill marks appear.

  3. 3

    Make the Lemon Caper Butter

In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in the capers and lemon juice, then remove from heat.

  4. 4

    Sauté the Spinach

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.

  5. 5

    Serve

Place the wilted spinach on plates, top with grilled swordfish, and drizzle with the lemon caper butter. Serve the sliced fingerling potatoes on the side.
