Cooking Instructions
- 1
Prepare the Potatoes
Preheat the oven to 200°C (400°F). Wash and cut the new potatoes in half. Toss them in a bowl with 2 tablespoons of olive oil, salt, and paprika. Spread them on a baking sheet and roast for about 30-35 minutes until crispy and golden.
- 2
Prepare the Broccolini
While the potatoes are roasting, bring a pot of salted water to a boil. Blanch the broccolini for 2-3 minutes until bright green and tender-crisp. Drain and toss with 1 tablespoon of olive oil and a pinch of salt.
- 3
Grill the Branzino
Rinse the branzino under cold water and pat dry. Make a few diagonal slashes on each side of the fish. Rub the fish with the remaining olive oil, minced garlic, salt, and pepper. Squeeze half a lemon over the fish for flavor. Preheat a grill or grill pan over medium-high heat and grill the fish for 5-6 minutes on each side, or until the flesh is flaky and cooked through.
- 4
Make the Romesco and Gremolata
For the romesco, blend roasted red peppers, garlic, almonds, olive oil, and vinegar until smooth. For the gremolata, combine minced parsley, garlic, lemon zest, and olive oil in a bowl.
- 5
Serve
Plate the grilled branzino with crispy potatoes and broccolini. Drizzle with romesco sauce and top with gremolata before serving.
