    Prepare the Bone Marrow

    Preheat your grill to medium-high heat. Brush the bone marrow bones with olive oil, and season with salt and black pepper.

    Grill the Bone Marrow

    Place the bones cut-side up on the grill and cook for about 15-20 minutes, or until the marrow is bubbling and starting to brown.

    Make the Balsamic Onions

    In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onions and sauté until soft. Stir in balsamic vinegar and cook until the vinegar reduces slightly and coats the onions.

    Prepare the Citrus Gremolata

    In a small bowl, combine citrus zest, chopped parsley, and minced garlic. Mix well and set aside.

    Toast the Bread Crumbs

    In a separate pan, heat a tablespoon of olive oil over medium heat. Add the bread crumbs and toast until golden brown, stirring frequently.

    Serve

    Once the marrow is cooked, remove it from the grill. Serve the grilled bone marrow with toasted bread crumbs, balsamic onions, citrus gremolata, and grilled bread on the side.
