Preparation Instructions

  1. 1

    Prepare the Octopus

In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes or until tender. Once cooked, remove from water and let it cool. Cut into manageable pieces.

  2. 2

    Char the Octopus

Preheat the grill or a grill pan over high heat. Toss the octopus pieces with olive oil, salt, and pepper. Grill for 3-4 minutes on each side until charred and crispy.

  3. 3

    Prepare the Herb Potatoes

Boil the herb potatoes in salted water until fork-tender. Drain, then toss with olive oil, fresh herbs, salt, and pepper.

  4. 4

    Make the Celery Salad

Thinly slice the celery and toss it with olive oil, lemon juice, salt, and pepper. Let it sit for a few minutes to marinate.

  5. 5

    Prepare the N'duja Vinaigrette

In a small bowl, mix the N'duja, olive oil, minced garlic, and lemon juice until well combined.

  6. 6

    Plate the Dish

On a serving plate, arrange the charred octopus, herb potatoes, and celery salad. Drizzle with N'duja vinaigrette before serving.
