    Prepare the Ingredients

    Chop the onions, bell pepper, and greens. Set aside.

    Cook the Base

    In a large pot, heat the palm oil over medium heat. Add the chopped onions and sauté until translucent.

    Add Vegetables

    Stir in the chopped bell pepper and cook for an additional 2 minutes.

    Incorporate Egusi

    Add the ground egusi to the pot and stir well, allowing it to cook for about 5 minutes.

    Add Liquid

    Pour in the water or stock, stirring to combine. Bring to a boil.

    Season the Soup

    Add the ground crayfish, seasoning cubes, salt, and pepper. Reduce heat and simmer for 15 minutes.

    Stir in the chopped spinach or bitter leaf and cook for an additional 5 minutes.

    Remove from heat and serve hot, typically with fufu or rice.
