    Prepare the Tuna Steaks

    Season both sides of the tuna steaks with salt and crush the black peppercorns using a mortar and pestle or a heavy pan. Press the crushed peppercorns onto both sides of the tuna steaks to coat them evenly.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the butter and allow it to melt and foam.

    Cook the Tuna Steaks

    Place the seasoned tuna steaks in the skillet and sear for about 2-3 minutes on each side for medium-rare, depending on thickness. Adjust the cooking time for your desired doneness. Remove the steaks from the skillet and let them rest on a plate.

    Prepare the Pepper Sauce

    In the same skillet, add the chopped shallots and sauté for about 1-2 minutes until they are soft. Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet.

    Finish the Sauce

    Stir in the lemon juice and let the sauce reduce slightly for about 2-3 minutes. Adjust the seasoning with salt and more crushed pepper if desired.

    Serve

    Slice the tuna steaks and plate them. Drizzle the pepper sauce over the top and garnish with chopped parsley. Serve immediately.
