Marinade

Method

Marinade Preparation

1

Combine Marinade Ingredients

In a medium bowl, combine the Piri Piri sauce, minced garlic, lemon juice, olive oil, paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

2

Marinate the Chicken

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Cooking the Chicken

3

Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

4

Grill the Chicken

Remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill, skin-side down. Grill for about 6-7 minutes, then flip and grill the other side for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).

5

Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before serving. This allows the juices to redistribute for a more tender chicken. Serve with additional Piri Piri sauce if desired.
