Marinade Preparation
Prepare the Marinade
In a food processor, combine garlic cloves, olive oil, oregano, cumin, salt, black pepper, and lemon juice. Blend until smooth.
Marinate the Pork
Make several deep cuts in the pork shoulder to allow the marinade to penetrate. Rub the marinade all over the pork, ensuring it gets into the cuts. Place the pork in a large resealable bag or dish, add bay leaves, and refrigerate for at least 12 hours, preferably overnight.
Cooking Instructions
Preheat the Oven
Preheat your oven to 300°F (150°C).
Prepare the Cooking Dish
Remove the marinated pork from the refrigerator and let it sit at room temperature for about 30 minutes. Place the pork in a roasting pan and add water to the bottom of the pan.
Finish Roasting
After 4 hours, remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 to 45 minutes until the skin is crispy and the internal temperature reaches 190°F (88°C).
Rest and Serve
Remove the pork from the oven and let it rest for 20 minutes before carving. Serve with your favorite sides.
