Method
Preparation
- 1
Prepare the Filling
In a medium bowl, combine the crabmeat, breadcrumbs, cream cheese, chopped green onions, minced garlic, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well until the ingredients are evenly combined.
- 2
Prepare the Filets
Rinse the filet of sole under cold water and pat dry with paper towels. Lay the filets flat on a clean surface.
Stuffing and Cooking
- 3
Stuff the Filets
Take a generous amount of the crabmeat filling and place it in the center of each filet. Carefully fold the sides of the filet over the filling to create a pocket.
- 4
Prepare for Broiling
Preheat your broiler to high. Place the stuffed filets on a lightly greased broiler pan.
- 5
Add Topping
Melt the butter in a small bowl and mix in the paprika. Brush this mixture over the top of the stuffed filets.
- 6
Broil the Filets
Broil the filets for approximately 8-10 minutes, or until the fish is cooked through and the top is golden brown. Keep an eye on them to prevent burning.
Serving
- 7
Serve
Once cooked, remove the filets from the oven and let them cool for a minute. Serve warm, garnished with additional lemon wedges if desired.
