Preparation of Steak

    Marinate the Steak

    In a bowl, mix olive oil, minced garlic, white wine, salt, and black pepper. Place the shell steaks in the marinade and let them sit for at least 30 minutes.

    Cook the Steak

    Heat a skillet over medium-high heat. Remove the steaks from the marinade and reserve the marinade. Sear the steaks in the skillet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

Making the Sauce

    Prepare the Sauce

    In the same skillet, add the reserved marinade and bring it to a simmer. Allow it to reduce for about 5 minutes until slightly thickened, scraping up any browned bits from the bottom of the pan.

    Add Ham

    Add the sliced smoked ham to the sauce and cook for an additional 2-3 minutes until heated through.

Frying Eggs

    Fry the Eggs

    In a separate non-stick skillet, add a little olive oil and heat over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

    Assemble the Dish

    Place the rested shell steak on a plate, spoon the ham and sauce mixture over the steak, and top with a fried egg. Garnish with chopped fresh parsley.
