Method

Preparation

  1. 1

    Prepare the Marinade

In a medium bowl, whisk together olive oil, minced garlic, soy sauce, lime juice, honey, salt, black pepper, and red pepper flakes (if using) until well combined.

  2. 2

    Marinate the Shrimp

Add the jumbo shrimp to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Pineapple

While the shrimp is marinating, peel, core, and slice the fresh pineapple into rings or bite-sized chunks.

Cooking

  1. 4

    Heat the Grill or Skillet

Preheat a grill or a large skillet over medium-high heat. If using a grill, ensure it is clean and lightly oiled.

  2. 5

    Cook the Shrimp

Remove the shrimp from the marinade (discard any leftover marinade) and place them on the grill or skillet. Cook for 2-3 minutes on each side or until they turn pink and opaque.

  3. 6

    Grill the Pineapple

In the last few minutes of cooking the shrimp, add the pineapple slices to the grill or skillet. Cook for about 2 minutes on each side until caramelized.

Serving

  1. 7

    Plate the Dish

Once cooked, remove the shrimp and pineapple from the heat. Arrange them on a serving platter.

  2. 8

    Garnish and Serve

Sprinkle the chopped cilantro over the shrimp and pineapple. Serve with lime wedges on the side for squeezing over the top.
