Preparing the Lamb

Marinate the Lamb
In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the rack of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator for enhanced flavor.

Grill the Lamb
Once the grill is ready, place the rack of lamb on the grill bone side down. Grill for about 15-20 minutes for medium-rare, turning occasionally for even cooking. Use a meat thermometer to check for an internal temperature of 130°F (54°C).

Rest the Lamb
After grilling, remove the rack of lamb from the grill and let it rest for 10 minutes before slicing. This helps retain the juices.
Making the Mint Sauce

Prepare the Mint Sauce
In a small bowl, combine the chopped fresh mint leaves, sugar, white wine vinegar, and water. Stir well until the sugar dissolves and the mixture is well combined. Allow it to sit for at least 10 minutes to meld the flavors.

Slice the rack of lamb between the bones into individual chops. Serve warm with the mint sauce drizzled over the top or on the side for dipping.
