    Marinate the Pork Loin

    In a bowl, mix olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Rub this mixture all over the pork loin and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Mushrooms

    Clean the portobello mushrooms with a damp cloth and slice them into thick pieces.

    Sear the Pork Loin

    In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the marinated pork loin and sear it on all sides until browned (about 2-3 minutes per side). Remove the pork from the skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add another tablespoon of olive oil and sauté the sliced portobello mushrooms until they are tender and golden brown (about 5-7 minutes). Remove the mushrooms and set them aside with the pork.

    Make the Sauce

    In the same skillet, add the port wine and scrape the bottom to deglaze the pan. Let it simmer for about 2-3 minutes. Add the chicken broth and bring to a gentle simmer. Stir in the heavy cream and let the sauce thicken slightly.

    Combine and Cook

    Return the pork loin and mushrooms to the skillet, spooning the sauce over the top. Cover the skillet with a lid and cook on low heat for about 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Serving

    Serve the Dish

    Remove the pork loin from the skillet and let it rest for 5 minutes before slicing. Serve the sliced pork with the mushrooms and drizzle the port wine sauce over the top.
