Method

Preparation

  1. 1

    Prepare the Ingredients

Start by cubing the pork shoulder into bite-sized pieces. Clean the clams under cold running water to remove any sand or grit. Dice the potatoes into small cubes.

  2. 2

    Season the Pork

In a large bowl, combine the cubed pork with salt, black pepper, and paprika. Mix well to ensure the pork is evenly coated with the spices.

Cooking

  1. 3

    Fry the Pork

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned pork cubes and fry until golden brown and cooked through, about 8-10 minutes. Remove the pork from the skillet and set aside.

  2. 4

    Cook the Potatoes

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the diced potatoes and cook until they are golden and tender, about 10-12 minutes. Stir occasionally to prevent sticking.

  3. 5

    Add Garlic and Clams

Once the potatoes are ready, add the minced garlic and sauté for 1-2 minutes until fragrant. Then, add the cleaned clams to the skillet. Cover and cook for about 5-7 minutes until the clams open up.

  4. 6

    Combine and Serve

Return the cooked pork to the skillet and stir to combine with the potatoes and clams. Cook for an additional 2 minutes to heat everything through. Garnish with chopped parsley before serving.
