    Prep the Ingredients

    Gather all ingredients and chop the vegetables: dice the onion, chop the bell peppers, slice the zucchini, and finely chop the garlic. Set aside.

Cooking

    Sauté Onion and Garlic

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.

    Cook the Vegetables

    Add the chopped red and green bell peppers and zucchini to the pan. Cook for another 5-7 minutes until the vegetables are tender.

    Add Rice and Spices

    Stir in the Bomba rice, smoked paprika, salt, and pepper. Mix well to coat the rice in the oil and spices.

    Add Broth and Saffron

    Pour in the vegetable broth and add the saffron threads. Stir to combine all the ingredients.

    Simmer the Paella

    Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.

    Add Peas and Tomato

    During the last 5 minutes of cooking, add the peas and diced tomato to the pan, stirring gently to incorporate.

    Rest the Paella

    Once cooked, remove from heat and let sit for 5 minutes, covered, to allow flavors to meld.

    Garnish and Serve

    Fluff the rice with a fork and garnish with fresh parsley and lemon wedges before serving.
