    Clean the Mussels

    Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any dirt. Remove the beards (the fibrous strands) from the mussels by pulling them towards the hinge of the shell.

Cooking

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and crushed red pepper flakes, cooking for another minute until fragrant.

    Add Tomatoes and Wine

    Pour in the crushed tomatoes and dry white wine. Stir well to combine, then bring the mixture to a simmer. Season with salt and black pepper to taste.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

    Garnish and Serve

    Once the mussels are cooked, stir in the chopped parsley for freshness. Serve the mussels hot in bowls with the red sauce ladled over them.
