Meats

Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine the olive oil, minced garlic, lemon juice, salt, black pepper, paprika, and oregano. Whisk together until well blended.

  2. 2

    Marinate the Meats

Cut the shell steak, pork tenderloin, and Portuguese sausage into 1-inch cubes. Place the meat in a large bowl and pour the marinade over it. Toss to coat all pieces evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

  3. 3

    Prepare the Vegetables

While the meat is marinating, chop the bell peppers and onion into 1-inch pieces. Rinse the cherry tomatoes and set aside.

Assembly

  1. 4

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, you can skip this step.

  2. 5

    Assemble the Skewers

Thread the marinated meats and prepared vegetables onto the skewers, alternating between meat and vegetables. For example, start with a piece of shell steak, then a piece of bell pepper, followed by a piece of onion, and continue until the skewer is filled.

  3. 6

    Add Bacon

Cut the bacon slices in half and weave them onto the skewers between the other ingredients for added flavor.

Cooking

  1. 7

    Preheat the Grill

Preheat your grill to medium-high heat, about 400°F (200°C).

  2. 8

    Grill the Skewers

Place the assembled skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the meats are cooked through and the vegetables are tender and slightly charred.

  3. 9

    Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve hot and enjoy!
