Method

Prepare the Sauce

    For Red Sauce

    In a saucepan, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    For Red Sauce

    Add the minced garlic and diced tomatoes, cooking for another 5-7 minutes until the tomatoes break down.

    For Red Sauce

    Stir in fish stock, salt, black pepper, and red chili flakes. Bring to a simmer and let it cook for 10 minutes.

    For Green Sauce

    In a saucepan, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    For Green Sauce

    Add the minced garlic, chopped green bell pepper, and chopped cilantro, cooking for another 5-7 minutes.

    For Green Sauce

    Stir in fish stock, salt, and black pepper. Bring to a simmer and let it cook for 10 minutes.

Cook the Shellfish

    Add the shrimp, mussels, clams, and squid to the prepared sauce (red or green) and cover. Let it cook for about 5-7 minutes, or until the shellfish have opened and the shrimp are cooked through.

    Stir in lemon juice and adjust seasoning, adding more salt and pepper to taste.

Serve

    Ladle the mariscada into bowls. Garnish with lemon wedges and fresh cilantro leaves.

    Serve hot with crusty bread or rice.
