Method

Crust

  1. 1

    Prepare the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Combine Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

  3. 3

    Form the Crust

Press the mixture into the bottom and up the sides of a 9-inch pie pan to form an even crust.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and allow to cool.

Filling

  1. 5

    Mix Filling Ingredients

In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well combined.

  2. 6

    Fill the Crust

Pour the filling mixture into the cooled crust, spreading it evenly.

  3. 7

    Bake the Pie

Bake in the oven for an additional 15 minutes until the filling is set. Remove from oven and let it cool to room temperature.

  4. 8

    Chill

Refrigerate the pie for at least 3 hours, or until well chilled.

Topping

  1. 9

    Whip the Cream

In a medium bowl, using an electric mixer, beat the heavy whipping cream on medium speed until soft peaks form.

  2. 10

    Add Sugar and Lime Zest

Gradually add the powdered sugar, continuing to beat until stiff peaks form. Gently fold in the lime zest.

  3. 11

    Top the Pie

Spread the whipped cream mixture over the chilled key lime pie evenly.
