For the Grilled Swordfish

    Prepare the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

    Marinate the Swordfish

    Place the swordfish steaks in a shallow dish and pour the marinade over the fish. Ensure all sides are coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Swordfish

    Remove the swordfish from the marinade and discard the marinade. Grill the swordfish for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

    Garnish

    Once grilled, remove the swordfish from the grill and sprinkle with fresh parsley before serving.

For the Portobello Balsamic Glaze

    Prepare the Mushrooms

    Clean the portobello mushrooms with a damp cloth and slice them into thick pieces.

    Sauté Shallots and Mushrooms

    In a saucepan over medium heat, melt the butter. Add the chopped shallots and sauté until translucent, about 2-3 minutes. Add the sliced portobello mushrooms and cook for another 5 minutes until softened.

    Add Balsamic Vinegar and Honey

    Pour in the balsamic vinegar and add honey to the pan. Stir to combine and bring to a simmer.

    Season and Reduce

    Add thyme leaves, salt, and black pepper. Let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens to a glaze consistency.

    Serve the Glaze

    Remove from heat and serve the balsamic glaze over the grilled swordfish.
