Preparation

    Clean the Fish

    Rinse the whole red snapper under cold water. Use a sharp knife to make several diagonal cuts on both sides of the fish, about 1 inch apart. This will help the marinade penetrate and ensure even cooking.

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and paprika until well combined.

    Marinate the Fish

    Rub the marinade all over the fish, including inside the cavity and in the cuts you made. Allow the fish to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F). If using charcoal, make sure the coals are evenly lit and covered with white ash.

    Grill the Fish

    Once the grill is hot, carefully place the marinated red snapper on the grill grates. Grill for about 6-8 minutes on one side without moving it, then gently flip the fish using a spatula and grill for another 6-8 minutes on the other side, or until the flesh is opaque and flakes easily with a fork.

Serving

    Garnish and Serve

    Once cooked, carefully remove the fish from the grill and transfer it to a serving platter. Garnish with lemon wedges and sprigs of fresh parsley. Serve immediately with your choice of sides.
