Method
Preparation
- 1
Prepare the Prime Rib
Remove the prime rib roast from the refrigerator and let it sit at room temperature for 1 hour before cooking.
- 2
Season the Meat
In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, chopped fresh rosemary, and chopped fresh thyme. Rub the seasoning mixture all over the prime rib roast, ensuring it is evenly coated. Drizzle olive oil over the roast and rub it in to enhance the flavor.
Grilling
- 3
- 4
Sear the Prime Rib
Place the prime rib roast directly over the hot side of the grill. Sear each side for about 5-7 minutes to develop a nice crust.
- 5
Move to Indirect Heat
Once seared, move the prime rib roast to the cooler side of the grill (indirect heat) and close the lid. Cook for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare, or to your desired doneness.
- 6
Rest the Meat
Remove the prime rib from the grill and tent it with aluminum foil. Allow it to rest for at least 20 minutes before slicing to let the juices redistribute.
Serving
- 7
Slice and Serve
Slice the prime rib roast against the grain into thick slices. Serve with horseradish sauce and au jus on the side, if desired.
