Preparation
- 1
Clean the Clams
Rinse the fresh clams under cold running water to remove any sand or debris. Scrub the shells with a brush if necessary.
- 2
Prepare the Ice Bed
In a large serving platter or a shallow bowl, layer the crushed ice evenly to create a bed for the clams.
- 3
Shuck the Clams
Using a clam knife, carefully open each clam, discarding the top shell. Leave the clam meat in the bottom shell and arrange them on the ice bed.
- 4
Garnish with Lemon
Cut the lemons into wedges. Arrange the lemon wedges around the clams on the ice.
- 5
Add Cocktail Sauce
Place a small bowl of cocktail sauce in the center of the platter for dipping.
