Preparation of Fish

    Soak the Salt Cod

    Rinse the salt cod under cold running water to remove excess salt. Place the salt cod in a bowl and cover it with water. Soak for at least 12 hours in the refrigerator, changing the water every 4 hours. Once soaked, drain and pat dry.

    Preheat the Broiler

    Set your oven's broiler to high and allow it to preheat for about 10 minutes.

    Chop the Vegetables

    Thinly slice the onion and bell pepper. Mince the garlic cloves.

    Sauté the Vegetables

    In a skillet over medium heat, add the Portuguese extra virgin olive oil. Once hot, add the sliced onion and bell pepper. Sauté for about 5-7 minutes until they are soft. Add the minced garlic, paprika, black pepper, and salt. Cook for another 2 minutes until fragrant.

Broiling the Cod

    Prepare the Cod

    Place the soaked and drained salt cod on a broiler-safe baking dish. Drizzle a little olive oil over the fish and season lightly with black pepper and salt.

    Broil the Cod

    Place the baking dish under the preheated broiler. Broil for about 8-10 minutes or until the fish is cooked through and flakes easily with a fork. Keep an eye on it to prevent burning.

Serving

    Plate the Dish

    Remove the cod from the broiler and transfer it to a serving plate. Spoon the sautéed onions and peppers over the top of the fish.

    Serve

    Serve the broiled codfish warm with your choice of sides such as boiled potatoes or a fresh salad.
