Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

  2. 2

    Prepare the Sauce

While the pasta is cooking, cut the pancetta into small cubes. In a large skillet over medium heat, cook the pancetta until it is crispy and golden, about 5-7 minutes. Remove from heat and let cool slightly.

  3. 3

    Mix the Egg and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combining

  1. 4

    Combine Pasta and Pancetta

Once the pasta is drained, add it to the skillet with the pancetta. Toss to combine, allowing the residual heat to keep the pasta warm.

  2. 5

    Add Egg Mixture

Remove the skillet from heat, then quickly pour the egg and cheese mixture over the pasta, tossing quickly to create a creamy sauce. If it's too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  1. 6

    Plate and Garnish

Serve the carbonara immediately, garnished with chopped fresh parsley and additional grated Parmesan cheese, if desired.
