Prepare the Ingredients
Slice the chicken breasts into thin fillets. Clean and slice the mushrooms. Chop the sundried tomatoes if they are whole. Mince the garlic and chop fresh parsley.

Sauté the Chicken
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the chicken fillets and season with salt and black pepper. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Add Wine and Lemon Juice
Pour in the white wine and lemon juice, scraping the bottom of the skillet to deglaze it. Bring the mixture to a simmer and let it cook for 3-4 minutes until slightly reduced.

Combine Ingredients
Stir in the sundried tomatoes and return the chicken to the skillet. Cook for an additional 2-3 minutes to heat through, allowing the flavors to meld.

Finish with Goat Cheese
Crumble the goat cheese over the chicken and sauce, stirring gently until the cheese begins to melt and combine with the sauce.

Remove from heat, sprinkle with fresh parsley, and serve immediately with your choice of sides.
