Method

Cooking the Pasta

  1. 1

    Boil the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add zucchini, bell peppers, and carrots, and cook for about 5-7 minutes until they begin to soften.

  2. 3

    Add Spinach and Tomatoes

Stir in the cherry tomatoes and fresh spinach. Cook for an additional 3-5 minutes until the spinach wilts and the tomatoes soften.

Making the Sauce

  1. 4

    Combine Ingredients

Add the canned diced tomatoes, Italian seasoning, salt, and black pepper to the skillet. Stir well to combine all ingredients and allow to simmer for 5 minutes.

Combining Pasta and Sauce

  1. 5

    Toss Everything Together

Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce and vegetables. Cook for an additional 2-3 minutes to heat through.

  2. 6

    Serve

Remove from heat and sprinkle with grated Parmesan cheese before serving. Enjoy your Pasta Primavera!
