Bolognese Sauce Preparation

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened and the onion is translucent, about 5-7 minutes.

Brown the Meat
Add the ground beef and ground pork to the skillet. Cook until browned, breaking it up with a wooden spoon, about 8-10 minutes.

Add Tomatoes and Wine
Stir in the crushed tomatoes and red wine. Add salt, black pepper, oregano, and bay leaf. Mix well.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer uncovered for about 30-40 minutes, stirring occasionally, until thickened.
Bechamel Sauce Preparation

Add Milk
Gradually whisk in the milk to the roux, ensuring there are no lumps. Continue to whisk until the sauce thickens, about 5-7 minutes.

Season the Sauce
Add nutmeg, salt, and black pepper. Stir well and remove from heat.
Lasagna Assembly

Layer the Ingredients
Preheat your oven to 180°C (350°F). Spread a layer of Bolognese sauce at the bottom of a baking dish. Place 3 lasagna sheets on top, followed by a layer of Bechamel sauce, then more Bolognese sauce. Repeat the layers until all ingredients are used, finishing with Bechamel on top.

Add Cheese
Sprinkle grated Parmesan cheese and place sliced mozzarella cheese on top of the final layer of Bechamel.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbling.

Cool and Serve
Let the lasagna cool for about 10-15 minutes before slicing and serving.
