Gnocchi Preparation

    Cook the Potatoes

    Place the Russet potatoes in a large pot, cover them with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 30-40 minutes. Drain and let cool slightly.

    Prepare the Dough

    Once the potatoes are cool enough to handle, peel them and mash them in a large bowl. Add the flour, egg, and salt, and mix until a dough forms. Be careful not to overwork the dough.

    Shape the Gnocchi

    Divide the dough into 4 sections. Roll each section into a long rope about ¾ inch thick, then cut into 1-inch pieces. Use a fork to create ridges on each piece if desired.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches. They will be ready when they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Alla Vodka Sauce Preparation

    In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes, and sauté for about 1 minute until fragrant.

    Carefully add vodka to the skillet and let it simmer for about 2-3 minutes to cook off some of the alcohol.

    Stir in the crushed tomatoes and heavy cream, mixing well. Let the sauce simmer for another 5-7 minutes until it thickens slightly.

Genovese Sauce Preparation

    In a large skillet, heat olive oil over medium heat. Add sliced onions and cook slowly for about 15-20 minutes, stirring occasionally until they are soft and caramelized.
