Base Preparation

    Heat Milk and Cream

    In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and creamy.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture while whisking continuously to temper the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool down to room temperature.

Flavoring and Freezing

    Add Flavorings

    Once the base mixture has cooled, incorporate your desired flavoring. For fresh fruit gelato, mix in the fruit puree. For chocolate gelato, melt the chocolate and stir it in. For hazelnut, whisk in Nutella. For coffee flavor, add brewed coffee.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the churned gelato into an airtight container and freeze for at least 4 hours or until firm.
