Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour and salt.

    Combine Ingredients

    Make a well in the center of the flour mixture and pour in the yeast mixture along with 1/4 cup of virgin olive oil.

    Knead Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Onions

    Thinly slice the large onion and set aside.

    Prepare Rosemary

    Rinse the fresh rosemary and chop it coarsely.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Shape Dough

    Once the dough has risen, punch it down and transfer it to a greased baking sheet. Press it out into a large rectangle or circle, about 1/2 inch thick.

    Brush the dough with the remaining 1/4 cup of virgin olive oil. Evenly distribute the sliced onions and chopped rosemary over the surface. Sprinkle with salt and black pepper.
