Method
Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Start by seasoning the chicken breasts with salt and black pepper on both sides.
- 2
Bread the Chicken
Set up a breading station: in one bowl, place the flour; in another, whisk the eggs; and in a third, place the bread crumbs. Dip each chicken breast first into the flour, shaking off the excess, then into the beaten eggs, and finally into the bread crumbs, pressing the crumbs onto the chicken to ensure they adhere.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and place them on a paper towel-lined plate to drain excess oil.
Assembly and Baking
- 4
Assemble the Chicken Parmigiana
In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon additional marinara sauce over each piece of chicken, then sprinkle the shredded mozzarella and grated Parmesan cheese on top.
- 5
Bake
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
- 6
Serve
Remove from the oven and let it cool for a few minutes before serving. Serve hot with pasta, salad, or crusty bread.
