Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water and remove the tentacles. Cut the body into rings about 1/2 inch thick.

Prepare the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Prepare the Egg Mixture
In another bowl, whisk together the eggs and buttermilk until smooth.

Dredge the Calamari
Dip each calamari ring first into the egg mixture, then into the flour mixture, ensuring it is well coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches, cooking for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

Serve
Once the calamari is fried and the sauce is ready, serve the fried calamari with marinara sauce on the side for dipping.
