For the Suadero Filling

Method

Cooking the Suadero

  1. 1

    Prepare the Meat

Cut the suadero meat into smaller pieces, about 2 inches each. Season with salt, black pepper, and cumin. Set aside.

  2. 2

    Cook the Meat

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent. Add the seasoned meat pieces and sear them on all sides.

  3. 3

    Simmer

Add bay leaves and enough water to cover the meat. Bring to a boil, then reduce the heat and let it simmer for about 2-3 hours until the meat is tender.

  4. 4

    Shred the Meat

Once the meat is tender, remove it from the pot and let it cool slightly. Shred the meat using two forks.
