1. Prepare the Suadero

In a large skillet, heat olive oil over medium-high heat. Season the suadero beef with salt, black pepper, cumin, and oregano. Add the beef to the skillet and sear until browned on all sides, about 5-7 minutes.

2. Add Aromatics

Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

3. Simmer

Reduce heat to low and cover the skillet. Let the beef simmer for 30-40 minutes, or until tender. Stir occasionally and add a splash of water if necessary to prevent sticking.

4. Shred the Beef

Once the beef is tender, remove from heat and let it cool slightly. Shred the beef using two forks and mix in lime juice and chopped cilantro.

5. Assemble the Burrito

Warm large flour tortillas. Place a generous amount of the suadero filling in the center of each tortilla, fold in the sides, and roll tightly to form a burrito.
