Prepare the Rice
Rinse the rice under cold water until the water runs clear. In a pot, add 2 cups of water and a pinch of salt, bring to a boil. Add the rice, reduce the heat to low, cover, and let it simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Cook the Vegetables
In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent. Add the bell pepper and zucchini, and cook for an additional 5-7 minutes until tender. Season with salt, pepper, and paprika.

Cook the Seafood
In another skillet, add a bit of oil if necessary. Add the shrimp and octopus, season with salt, pepper, and lemon juice. Cook for about 5-7 minutes, until the shrimp turn pink and the octopus is cooked through.

Assemble the Plate
On a large serving platter, create a bed of rice in the center. Surround it with the sautéed vegetables and the cooked shrimp and octopus. Garnish with chopped parsley and additional lemon juice if desired.
