    Place the beef tongue in a large pot, cover with water, and season with salt. Bring to a boil, then reduce heat and simmer for about 2-3 hours, or until the tongue is tender. Remove from heat, let cool slightly, then peel off the skin.

    While the tongue is cooling, dice the tomato, onion, and jalapeño. Chop the cilantro and slice the avocado.

    Shred the Tongue

    Once the tongue has cooled enough to handle, slice it thinly or shred it.

    Warm the corn tortillas on a skillet. Spread a layer of refried beans on each tortilla, add shredded beef tongue, and top with diced tomato, onion, jalapeño, cilantro, and avocado. Squeeze lime juice over the top and season with salt and black pepper to taste.
