Cake Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or microwave in 30-second intervals, stirring until completely smooth. Allow to cool slightly.

    Whisk Eggs and Sugar

    In a separate mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually add the melted chocolate mixture into the egg mixture, stirring continuously to combine. Be careful not to cook the eggs.

    Add Flour and Vanilla

    Sift the all-purpose flour into the chocolate mixture and add the vanilla extract. Gently fold until just combined, being careful not to overmix.

    Prepare Ramekins

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.

    Fill Ramekins

    Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

    Cool Slightly

    Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

    Invert and Serve

    Carefully run a knife around the edges of the cakes to loosen them. Invert onto plates and serve immediately with a scoop of vanilla ice cream.
